A simple and delicious recipe for making your own damson jam. Perfect for spreading on toast or using in desserts.
Ingredients: 1 kg fresh damsons. 800g granulated sugar. 150ml water. 1 lemon juice and zest.
Instructions: Wash and pit the damsons, removing any stems or leaves. Place the damsons and water in a large pot, and simmer gently for 15 minutes until the fruit softens. Add the sugar and lemon juice and zest to the pot, stirring well. Bring the mixture to a boil and let it cook for about 20-25 minutes, or until the jam reaches the desired consistency. Skim off any foam that forms on the surface. To check if the jam is ready, place a small amount on a cold plate. If it wrinkles when you push it with your finger, it's done. Remove the pot from the heat and let it cool for a few minutes. Pour the hot jam into sterilized jars, seal them, and allow them to cool completely before labeling. Store your homemade damson jam in a cool, dark place and enjoy on toast, scones, or as a condiment.
