In addition to this month’s theme of HOMEMADE SAUCES (Homemade Tomato ketchup, Barbeque sauce, Nacho’s cheese sauce and Instant salsa, 6 varieties of Mayonnaise) next comes the Japanese sauce- Teriyaki. I believe teriyaki doesn’t need any intro as it being celebrated in many nations, though it’s from Asian origin. What is Teriyaki❓- it refers both to the cooking techniques and sauce prepared in Japan. The word ‘Teri’ refers to the shine and sheen imparted on the food by the sugar content in the sauce (‘Tare’ in Japanese) and ‘yaki’ refers to the Japanese grilling style. This glossy, robust sauce is packed with salty-sweet flavours and an umami punch. Umami is another Japanese term for ‘pleasant savoury taste’. Traditionally they are made from Soy sauce, sake or mirin with brown sugar and used as basting sauce or as a marinade for red meat or seafood. Today’s sauce is spruced up with more flavouring agents like sesame oil, ginger, garlic, honey and corn starch (thickening agent, optional). Finely slice Veggies of your choice, I used onion, coloured capsicums, baby corn, asparagus, blanched carrot and broccoli .Add Teriyaki sauce according to your requirements and the quantity of veggies you added. Quick and easy stir fry veggies are ready to serve with Sticky rice or noodles Sticky Rice is a dish, main course prepared in most of the Southeast Asian, East Asian, North-eastern India and Bhutan; with Glutinous rice/sweet rice/waxy rice. My version of Sticky rice is with Thai Jasmine rice in the place of glutinous rice. The reason why I prefer Jasmine rice is for its fragrance and swiftness in cooking in contrast to glutinous rice. What is Thai Jasmine rice- it’s a Thai staple grain also called as Hom Mali in their region which translates to Hom as fragrance and Mali as jasmine for its aroma resembling the flower Jasmine. It’s less sticky in nature and can be scaled between Thai glutinous rice and Japanese Sushi rice. It’s also soft and fluffy in texture. One more reason why I chose jasmine rice is because it can be served with many Asian curries, main courses and even in making fried rice.

Here is a recent purchase. We wanted to cook wok at home an needed a sauce to make the vegetables tastier. So we bought this Teriyaki sauce made by Ayam. (http://www.ayam.com/) This is the Australian website.

These products are distributed by another company in France, which is East West Distribution, which is specialized in distributing ethnic products. 

So, this one is pure Teriyaki sauce, a bit sweety. It fits well with vegetables. This is the typical sauce you have with japanese brochettes, the Yakitoris !

I tried 2 other Ayam sauces, which were : the soy sauce (http://www.ayam.com/asian-range-2.html#) and the Hoi Sin sauce. (http://www.ayam.com/asian-range.html#)

I must admit that I loved the Hoi Sin sauce, with is a thick sweety and spicy sauce. it goes very well with chicken and rice. You can make something amazing with it.

Concerning the Soya sauce, I did not like it. It was too salty. Not a good try. I am pretty attracted by the thick soya sauce then. I should give a try.

I also tried the Sesame oil (http://www.ayam.com/asian-range-2.html#), which was nice to cook with. It gives a real different taste to the food, a pure asian taste ! I love it !

Well, here you go with these Asian sauces. You can easily buy them in classic or asian supermarkets, or on the internet, on specialized asian food websites.

In general, I really like Asian sauces and dips, so do not hesitate to write a comment with other famous brands, or sauces.
