Japanese Braised Pork Belly

Boiled pork cartilage (cooking)
A dish similar to pork stew(kakuni). Boil the pork cartilage in a pressure cooker for 14 minutes to soften it, then add the preserved sauce and boil it twice in a heat-retaining cooking pot before serving. The seasonings are soy sauce, sugar, star anise, and bay leaves. The meat costs about $3 and you can make a lot of it. It has a softer texture than kakuni and is delicious. Star anise is the decisive factor.
豚軟骨煮(料理)
豚の角煮に似た料理。豚軟骨を圧力鍋で14分煮て柔らかくし、その後保存していたタレを合わせて保温調理鍋で2回煮てサーブする。調味料は、醤油、砂糖、八角、ローリエ。肉の値段は3ドル程度で、たっぷり作れる。角煮より柔らかい口当たりで、美味しい。八角が決め手。

So the project was a Japanese Braised Pork…Kakuni. First I started with an amazing piece of Mugifuji pork belly from Canada, from the amazing guys @japanpremiumbeef Then the process was first searing then simmering for 3 hours. Then a second simmer with homemade dashi, saki, mirin, soy, sugar and ginger…another hour there…and the result, these beautiful nuggets. Slapped them inside some rice buns…BAM!
