There are both sweet and savory tastes in this Sweet Potato Pizza with Caramelized Onions and Kale. The crunchy crust, soft sweet potatoes, caramelized onions, and fresh kale all work together to make a delicious pizza that is also good for you.
Ingredients: 1 pizza dough. 1 medium sweet potato, peeled and thinly sliced. 1 cup kale leaves, chopped. 1 medium red onion, thinly sliced. 1/2 cup shredded mozzarella cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 teaspoon honey. Salt and pepper to taste. Red pepper flakes optional. Fresh basil leaves for garnish.
Instructions: Start by heating the oven up to 450F 230C. On a floured surface, roll out the pizza dough to the thickness you want. Put the dough that has been rolled out on a pizza stone or baking sheet. Toss the sweet potato slices with salt, pepper, and 1 tablespoon of olive oil in a bowl. Put the sweet potato slices on the pizza dough in a way that looks good. Put it in an oven that is already hot and bake it for 12 to 15 minutes, or until the crust starts to turn golden brown and the sweet potatoes are soft. Bring the last tablespoon of olive oil to a low heat in a skillet while the pizza is baking. It will take about 15 minutes of cooking for the red onions to get caramelized and browned after you add them. Put the honey and balsamic vinegar in a small bowl and mix them together. When the crust and sweet potatoes are done, take them out of the oven. Put the caramelized onions on top of the pizza in a thin layer. Add the chopped mozzarella cheese on top of the sweet potatoes and onions. Put the pizza back in the oven and bake for another 5 to 7 minutes, or until the cheese melts and bubbles. Take the pizza out of the oven and evenly spread the chopped kale on top of it. Pour the honey-balsamic mixture over the pizza and kale. For extra heat, you can sprinkle with red pepper flakes if you want to. Add some fresh basil leaves as a garnish. Cut your sweet potato pizza with caramelized onions and kale into pieces, serve it, and enjoy!
