My very first Princess of Wales title holder has to be Catherine/Katherine of Aragon because she overcame so much from loosing her first husband Arthur to eventually becoming the very first Queen Catherine/Katherine by marrying Henry VIII who she loved until her dying day even though he would end up leaving her and destroying their marriage for Anne Boleyn all because she failed to give him a son. I still think she was the only woman he ever loved just like he was the only man she ever loved especially since she still considered him her husband and herself his true wife/Queen despite the crap he put her through.
