I imagine Kenko is not necessarily a vegetarian (and certainly not a vegan), but rather someone who stays away from processed foods and unnecessary sugars. On top of loving vegetables and fruits, he probably likes making his own bread and such from scratch.

Unlike his clubmates, he insists on only having the freshest ingredients and steering clear of as many processed things as possible. Which Saki, as a candy and soda lover is incredibly against. Not only has she gotten addicted to processed foods, but she probably finds them more convenient and uses them as motivation to make things that she doesn't like.

I'll likely assign every garden club member something they prefer growing, so I suppose Himari will be the vegetable gardener.

As for Itachi, he'll likely attempt to give the cooking club something in return for a healthy lunch for his every day. Maybe in return, they use some of their club budget to provide for some of the cooking club's ingredients?
