I have tried many different ways to season and/or add flavor to pork shoulder: salting the outside, Cuban style marinade, injecting liquid solution, etc. but the best result came from prepping the Pork similar to curing a ham, except there is no sugar involved. Be sure to select pork shoulder that is marbled in fat, the fattiest the better, and a large skin covering so you’ll end up with a Pork shoulder that’s very flavorful, juicy and tender. . . Roasted Pork Shoulder 10 lbs. bone-in Pork shoulder, rinsed, pat dry and scored. In a bowl combine - * 1 cup kosher salt * 1 TBSP. ground black pepper * 1 TBSP. cayenne * 1 TBSP. smoked paprika * 2 TBSP. ground coriander Note: You will only be using about 1/3 of this Seasoning mixture depending on how big the pork shoulder. Store the left over for future use. This same seasoning can also be used for seasoning other meats. Using a sharp, narrow Steak knife, deeply pierce the pork all around. Season the pork liberally, pushing as much seasoning as you can into the deep cuts. The best way to do this is - while the knife is lodged on the pork, wiggling it lightly to allow the Seasoning to flow down deep into the cuts. Place Pork into a covered plastic container and let sit in the fridge for 12 to 24 hours. Take out pork front the fridge and discard any liquid that have accumulated in the container. Line baking pan with heavy aluminum foil. Place a wire rack in it. Place pork on the wire rack. Preheat oven at 325•F. Roast pork, uncovered, for 6.5 hours. (Allow 40 minutes of roasting time per pound of pork.) Serve with your favorite side dishes.
