What’s nooch?

It’s short for nutritional yeast which is a yeast grown on molasses and harvested and dried with heat to deactivate it. It has a really delicious savory, umami flavor profile that’s a little like cheese. You can buy it in flakes and sprinkle it on virtually any dish or add it to sauces or the batter you fry things in to give it a fuller flavor. It’s also supplemented with B12, which is the only vitamin vegans have a hard time getting enough of* so with the cheesy flavor and B12 it’s a staple in most vegan kitchens. 

* Vitamin B12 is made by bacteria. Grazing animals pick up B12 and bacteria that produce it from the soil at the roots of the plants they eat, but because plants grown for human consumption are so often covered with pesticides and/or washed/sanitized they don't retain this property. Meats have the B12 from the gut bacteria in animals. Some animals-- like dogs-- also occasionally eat feces because it contains the bacteria and thus the B12 they need. 

Vitamin B12 can be obtained pretty easily through supplemented foods like soy milk, nooch, breakfast cereals, etc. But if someone’s having a hard time getting enough, it’s highly recommended they take a pill-based supplement.
