Just think; there may be an abundance of culinary herbs available now, but when you wheel your shopping cart past that sorry looking, over-priced herb selection in the dead of winter, you’ll be congratulating yourself for making up a big batch of these while you could. You can use any herbs you like to cook with — basil, chives, dill, oregano, mint or thyme are all good options. We like to use extra virgin olive oil, but you can use whatever cooking oil you prefer or even melted butter. To make, simply chop the herbs to your preferred size, press them down into the ice cube molds, leaving a little room at the top, then cover completely with oil. Freeze until completely solid. You can keep them in the ice cube tray if you like, or pop them out and store them in a freezer bag or Tupperware container. To use, throw one into a hot pan, add to a pot of simmering stock or thaw at room temperature for making dressings. Add to a pan of rice, your morning eggs or spread on a piece of toast.
