For a lighter meal or side, raw or briefly sautéed in olive oil and with a (big) squeeze of lime, this sort of substantial salad ticked all the boxes ✔️ . 🌈 Swipe for the rainbow-y ingredients but whatever is in your fridge would work. 🌶 Red pepper was a bit watery so I only added it at the end (also, I’m the only fan around here). 🍅 Same would happen with tomato or cucumber, avoid for this method. . Chop 4 seconds speed 4 reverse blade, ingredients together (if together, insert spatula) or separate (for you, the photo, and if you chop something like beetroot and don’t want everything pink) add 1 or 2 seconds until desired size .
