Vegetable korma curry 🍠🍛🥒 Ingredients • 1 onion, chunks • 3 cloves garlic, halved • 1 jalapeno, deseeded • ¼ cup raw cashews • 1 tbsp oil • 2 tsp curry powder • 1 tsp turmeric • 1 tsp garam masala • ½ tsp cinnamon • ½ tsp ground coriander • ½ tsp salt • ½ tsp pepper • 1 cardamom pod or 1/8 tsp ground cardomom • 2 tomatoes, diced • ½ cup coconut milk • ¾ cup coconut yoghurt • 1 ½ tsp brown sugar • 1/2 medium pumpkin, cubed • 1 zucchini, sliced • 2 carrots, sliced • 400g can chickpeas, rinsed and drained Method 1. Place the onion, garlic, jalapeno and cashews in a blender with ½ cup of water and process until smooth. 2. Heat the oil in a large saucepan and add the spices curry powder through until cardamom. Stir and saute until fragrant. 3. Pour in the pureed cashew mixture and allow to cook for 2-3 mins. Add in the tomatoes, coconut milk and yoghurt, brown sugar, carrots and pumpkin. Stir well and allow to cook for 10 mins. 4. Now add in the zucchini and chickpeas and cook for a further 10 mins. season with salt and pepper.
