Today's cheese is kwaito!
Kwaito is a specific sort of cheese local to South Africa, produced by the Indezi River Cheese Company. It is characterized by its smooth, creamy texture, as well as its variety of flavors. It is named kwaito as a derivative of the South African term "kwaai", which is an equivalent of the English "cool". It is unclear if this is meant to be a reference to the cool flavor of the cheese, or as a descriptor, as in "this is a really cool cheese!" But another fun fact about this name is that it is shared with a whole genre of South African music!
As kwaito is made by a specific company, there are no recipes for it that I have been unable to find. However, there are links to online shops where you can find it and also directly support the manufacturers. Try it if you like!
