This evening for iftar I made some easy pesto pasta 😊 this is a lactofree recipe but if you're okay with lactose please feel free to use the dairy items instead of the lactofree. And if you'd like to make it vegan just switch the chicken to veggie chicken pieces. I actually think it works better with the meat alternative but didn't have any.
Ingradients:
1 chicken breast
250g dry pasta
1 jar pesto (190g)
1 bottle of cream (250g)
2 tablespoons olive oil
3 cloves of garlic
1 teaspoon Black pepper
1 teaspoon salt
3 ladle reserved pasta water
Cherry tomatoes
Optional: hard cheese on top for serving
Start by adding your pasta to a pan of boiling water. Cook according to the packaging instructions. Save all your pasta water as it be needed for later.
On another hob on low heat in a large pan add the olive oil, once hot add the thinly sliced garlic. Only keep until the garlic releases it's smell, for about 30 seconds and then add the cut up chicken. Feel free to cut the chicken smaller than I have 😊 cook the chicken until it is cooked through, shouldn't take more than a few minutes because the pieces are small. The chicken will release its water and that's normal. Add the salt and black pepper. Add 2 ladles of the pasta water and cook for a minute until its all boiling together. Add the jar of pesto. Add more pasta water as needed. The sauce needs to be quite watery as it will Thicken. Add the cream and mix well. Once all boils together add the pasta and mix together.
At this point it will look very runny but just rest the pasta for 10 mixing, mix every 2 minutes. Once it's rested you will see its a lot drier and creamier. You can add the tomatoes straight in the pan or in each bowl. I don't like reheated tomatoes so I add them in the bowl. Top with some hard cheese on top and you're good to go ❤️
