Lahmajoun
Here with italian parsley, red onions and lemon juice, but any green salad will make a great sidekick.
Lahmajoun is an Armenian sort of pizza. I have an Armenian cookbook from my mother in law but the recipe is a bit time consuming so I have taken short cuts over the years and I’ve improved it over the past 36 years.
First trick is use flour tortillas as the base for the pizza.
Next trick is to cook the lamb, onions and peppers in a frying pan almost all the way through, then drain any excess oil off of the mixture. Otherwise the tortilla gets too oily and doesn’t crisp up.
And my last trick is to use a touch of pizza sauce on the tortillas so that the lamb mixture sticks to the tortilla.
These came out really good and I’ve had several failures over the past 36 years.
