A tasty change from regular lasagna are these Beef Spinach Lasagna Roll Ups. They are rolled up into individual servings and filled with tasty ground beef, healthy spinach, and creamy cheeses. This makes for a fun and stylish presentation. Great for a cozy family dinner or having people over!
Ingredients: 1 lb ground beef. 1 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1/2 teaspoon dried basil. Salt and pepper to taste. 10 lasagna noodles, cooked according to package instructions. 1 1/2 cups marinara sauce. 2 cups fresh spinach leaves. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese.
Instructions: Preheat the oven to 375F 190C. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is translucent. Drain excess fat. Stir in the dried oregano, dried basil, salt, and pepper. Remove from heat. Spread a thin layer of marinara sauce on each cooked lasagna noodle. Top each noodle with a layer of spinach leaves, followed by a spoonful of the beef mixture, a spoonful of ricotta cheese, and a sprinkle of mozzarella cheese. Salt and pepper to taste. 2 cups marinara sauce. Fresh parsley, chopped for garnish.
