These luscious, low-carb Keto Chocolate Peanut Butter Lava Cakes are truly decadent. Ideal for sating your sweet tooth without deviating from the paleo or keto diets.

Ingredients: 4 tbsp almond flour. 2 tbsp unsweetened cocoa powder. 2 tbsp powdered erythritol. 1/4 tsp baking powder. Pinch of salt. 2 tbsp coconut oil, melted. 2 tbsp creamy peanut butter. 1 large egg. 1/2 tsp vanilla extract. 1 oz dark chocolate, chopped.

Instructions: Preheat the oven to 350F 175C. Grease two ramekins with coconut oil. In a small bowl, mix almond flour, cocoa powder, erythritol, baking powder, and salt. In another bowl, whisk together melted coconut oil, peanut butter, egg, and vanilla extract until smooth. Combine wet and dry ingredients until well incorporated. Divide half of the batter between the prepared ramekins. Place chopped dark chocolate in the center of each, then cover with the remaining batter. Bake for 10-12 minutes, until the edges are set but the centers are still slightly gooey. Let cool for a few minutes before serving. Enjoy warm!
