Set aside a well-seasoned 9-inch cast iron skillet. In a small bowl, combine cranberries, walnuts, and zest. In a large bowl, combine flour, sugar, baking soda, and salt. Toss 3 Tbsp of this mixture with the Cranberry mixture. In another small bowl, lightly beat together butter, eggs and vanilla. Pour this over the flour mixture and mix quickly with a wooden spatula just until combined. Fold in the Cranberry mixture, then scrape the batter into the skillet. Bake 40 minutes, until the cake is cooked through, and bring to the table while still warm. Let cool 10 minutes before cutting into wedges or spooning out.
