Simple Dinner 03/05
Today was a simple dinner kind of day. This is a good meal for a diet but also still delicious. Never mistake simple food for bland food. I made jerk prawns, cucumber and spinach salad and some baked sweet potato fries.
Serves 1
You will need: 1/2 cup prawns 1 tsp Dunn’s River Jerk Seasoning 1 clove garlic 1/2 cup spinach leaves 1/2 cup diced cucumber 1 tsp sesame oil Dash of mirin (sweet rice vinegar) 1 tsp honey 1 tsp lemon juice 1 tsp chili flakes Dash of soy sauce 1/2 sweet potato 1 tsp cornstarch 1 tsp paprika 1 tsp olive oil
Coat the raw king prawns with Dunn’s River Jerk Seasoning, olive oil and garlic. Add thyme as well if you have it. Be careful with the seasoning as a small amount goes a long way.
Pan fry this until it is cooked all the way through.
For the salad: In a bowl toss the spinach, cucumber and the following for the dressing: sesame oil, sweet rice vinegar (mirin), honey, salt, pepper, lemon juice, chili flakes and a tiny dash of soy sauce.
For the sweet potato: Slice sweet potato into fries style shape. Coat it in a bit of corn starch, paprika, salt and olive oil.
Put this in the oven for like 40 minutes at 200 degrees C and toss halfway through.
