Le @negrescohotel … Le Chantecler : deux noms iconiques et légendaires pour un seul et même lieu. Le Chantecler à sa création a très vite été une référence de la haute gastronomie française, tout comme La Chèvre d’Or, La Tour d’Argent, Le Grand Vefour… L’établissement a accueilli durant son long parcours une lignée de grands chefs qui ont continué à raconter son histoire tout en écrivant de nouveaux chapitres aux différentes identités culinaires : Maximin, Le Stanc, LLorca, Del Burgo, Rieubland… Depuis 2018, c’est la chef étoilée et MOF @virginiebasselot (en 2015 elle devient la seconde femme à obtenir cette distinction) qui continue la légende du Chantecler de par son engagement, en l’enracinant avec authenticité dans la modernité. Elle propose toute sa personnalité, sa fibre d’une force tranquille, exigeante et affranchie, une cuisine puissante et raffinée à la fois, entre audace et précision. Virginie Basselot voue une véritable passion pour ces produits qu’elle découvre, déniche lors de ses pérégrinations dans l’arrière pays. Elle transmet et retranscrit avec justesse le savoir-faire des ses producteurs et fournisseurs, qu’elle honore tout au long de ses créations. La chef a su parfaitement s’épauler d’une brigade passionnée et passionnante avec notamment sa Sous-Chef Victoria Boller @v.boller, @victormarion_chef, de Charles, Corentin,Brice et Thomas et pour la partition sucrée : @fabrice_didier et @charles.bernard.patisserie. Le service de salle étincelle avec une douce fierté d’une belle mission : celle du faire plaisir pour offrir un moment unique, vrai et ému. I just LOVE this restaurant, and been lucky enough to dine there several times. Next time will be under the art of @VirginieBasselot. Congratulations to @NegrescoHotel #Nice. Two Michelin-stars for #LeChantecler restaurant. The arrival of a new talent, #VirginieBasselot, at the gastronomic #restaurant, The Chantecler, has been honored with two stars in the 2019 #Michelin Guide. It is a huge tribute which recognizes her constant determination to perpetuate the history of this great restaurant at #TheNegresco. A restaurant with rare culinary elegance which is in harmony with the refinement of its exceptional #LouisXV décor. It is also an encouragement as, in the history of The Negresco, it is the first time that a woman has donned the head #chef’s hat. It’s a major challenge, but Virginie Basselot’s talent will more than rise to the occasion. With the strength of her convictions, she has created a menu which prolongs the culinary history of The Chantecler all while gently transforming it. Her great curiosity brings her to be inspired by the region and the wealth of the Mediterranean. Thus, the rockfish soup comes directly from…the Bay of Angels, just in front of The Negresco.
