As a proud owner of at least 10 portions of turkey, now vacuum-packed and safely stored in my freezer, I have given it some more thought myself. And this was today’s solution: Mexican Turkey Salad!
Rocket, coriander, red onion, avocado, chilli, corn chips and shredded turkey - with a dressing of lime juice, honey, good extra virgin olive oil, taco seasoning with extra smoked paprika, ground coriander, garlic and salt.
Absolutely lip-smacking good - and inspires a whole host of new food ideas for the next time: soft cell tacos, burritos, enchiladas and the lot. I especially loved the addition of corn chips to give it some crunch and mouthfeel. Recommended warmly for anyone with leftover turkey from Christmas!
(And trading this happily in with anyone for suggestions about leftover ham - besides the usual ham & pea soup, ham & cheese galettes and ham quiche... )🤗😄
