Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup melted coconut oil. 3 tablespoons almond butter. 3 tablespoons unsweetened applesauce. 1 teaspoon vanilla extract. 1/2 cup vegan chocolate chips.
Instructions: Preheat oven to 350F 175C. Line a baking sheet with parchment paper. In a large mixing bowl, whisk together almond flour, coconut flour, coconut sugar, baking soda, and salt. Add melted coconut oil, almond butter, applesauce, and vanilla extract to the dry ingredients. Mix until well combined. Fold in vegan chocolate chips. Using a cookie scoop or tablespoon, scoop dough onto the prepared baking sheet, leaving space between each cookie. Gently press down on each cookie with a fork or your fingers to flatten slightly. Bake for 10-12 minutes, or until edges are golden brown. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
