Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar, packed. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/2 cup canned pumpkin puree. 1/2 cup plain yogurt. 1/4 cup vegetable oil. 1 large egg. 1 tsp vanilla extract. For the streusel topping:. 1/4 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 cup unsalted butter, cold and cubed. 1/2 tsp ground cinnamon.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with paper liners. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves. In another bowl, mix together the pumpkin puree, yogurt, vegetable oil, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. In a separate small bowl, prepare the streusel topping by combining the flour, granulated sugar, cold cubed butter, and ground cinnamon. Use a fork or pastry cutter to blend until it resembles coarse crumbs. Fill each muffin cup with the pumpkin batter, about 2/3 full. Sprinkle a generous amount of the streusel topping over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
