For Lent, Pescado Adobado Horneado is a tasty and filling dish. The chili marinade gives the soft white fish fillets a sour kick, which makes it a great meatless meal for this time of year.
Ingredients: 4 fillets of white fish such as cod or tilapia. 1/4 cup chili powder. 2 cloves garlic, minced. 1/4 cup olive oil. 2 tablespoons lime juice. 1 teaspoon cumin. 1 teaspoon paprika. Salt and pepper to taste. Lime wedges for garnish. Fresh cilantro for garnish.
Instructions: In a bowl, combine the chili powder, minced garlic, olive oil, lime juice, cumin, paprika, salt, and pepper to make the marinade. Place the fish fillets in a shallow dish and pour the marinade over them. Make sure the fish is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor. Preheat your oven to 375F 190C. Transfer the marinated fish fillets to a baking dish and bake for 20-25 minutes, or until the fish flakes easily with a fork and has a nice golden crust.
