I ate so much this weekend and while it was necessary to be able to do my ride and I am trying to eat excess calories it was all very heavy things so I'm definitely going to be doing a light day of eating today. I think it'll make me feel better and less groggy. I'll still eat but nothing very heavy like this weekend.
Cashew Carrot Stir Fry
The cashews in this stir fry add great texture and flavor to this favorite diabetic friendly meal. Try carrot chips as a substitute to sliced carrots (with no prep) - change it up. Add leftover cooked meat such as pork roast or baked chicken or neither noting that edamame and nuts are already in this healthy meal. Serve this fry up on a bed of brown rice or whole wheat noodles or enjoy it as it comes…save yourself some carbs.
2 T. sesame oil
1 c. carrot chips
1 c. celery, cut into 1" long but thin strips
1 c. red onion, sliced into thin strips
1 c. edamame/mukimame, defrosted, shelled
1 c. bean sprouts, rinsed, drained
1 c. cashews
2 T. soy sauce
In a deep fry pan, add oil, carrots, celery and onion. When the carrots/celery/onion are just tender, add the edamame, bean sprouts, and cashews. When these are heated through, splash on the soy sauce, toss to distribute and serve!
