Ingredients: 1 cup Greek yogurt. 1/4 cup shredded coconut. 2 tablespoons honey. 2 limes, zest and juice. 1 cup granola. Fresh mint leaves for garnish.
Instructions: In a bowl, mix Greek yogurt, shredded coconut, honey, lime zest, and lime juice. Layer the yogurt mixture with granola in serving glasses or bowls. Repeat the layers until the glasses are filled. Top each parfait with a sprinkle of shredded coconut and a drizzle of honey. Garnish with fresh mint leaves. Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup coconut milk. 2 tbsp key lime juice. 1 tbsp key lime zest. 1/2 cup shredded coconut sweetened or unsweetened.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Mix in the dry ingredients in three parts, alternating with the coconut milk, beginning and ending with the dry ingredients. Be sure to scrape down the sides of the bowl as needed. Fold in the key lime juice, key lime zest, and shredded coconut until well combined. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Coconut Lime Fish Soup - Flavorful Seafood Delight
This Coconut-Lime Flattened Chicken is a tropical take on regular grilled chicken. The chicken is marinated in a tasty mix of coconut, lime, and spices, which makes the meat juicy, fragrant, and slightly sweet. Great for your next barbecue party!
Ingredients: 1 whole chicken, flattened. 1 cup coconut milk. 3 limes, juiced. 2 tablespoons soy sauce. 2 tablespoons honey. 3 cloves garlic, minced. 1 tablespoon ginger, grated. 1 teaspoon chili powder. Salt and pepper to taste. Chopped cilantro for garnish.
Instructions: To make the marinade, put the honey, soy sauce, lime juice, minced garlic, ginger, chili powder, salt, and pepper in a bowl. Flatten the chicken and put it in a large plastic bag that can be closed again or a shallow dish. Cover the chicken with the marinade by pouring it over it. For the best flavor, seal the bag or cover the dish and put it in the fridge for at least 4 hours or overnight. Warm up the grill over medium-high heat. Take the chicken out of the marinade and put it on a hot grill, letting any extra sauce drip off. The chicken should be grilled for 30 to 40 minutes, turning it over every so often, until the internal temperature reaches 165F 74C and the skin is golden brown and crispy. For extra flavor, baste the chicken with the rest of the marinade during the last 10 minutes of cooking. After cooking, take the chicken off the grill and let it rest for a few minutes. Then, cut it into pieces. Add chopped cilantro on top and serve hot. Have fun with your tasty Coconut-Lime Flattened Chicken!
