Recipe: Sandwich Bread Loaf

Ingredients
1 cup water
1/4 cup whole milk
2 1/4 tsp yeast (or 1 yeast packet, either active dry or instant works)
2 tablespoons sugar
4 tbsp unsalted butter, softened
1 1/2 tsp salt
3 1/3 cups bread flour
In a saucepan over a low flame, heat water and milk to 90F / 32.2c.
2. Pour milk/water mixture into a stand mixer or bowl, add yeast.
3. Let sit for 5 minutes, until yeast is foamy and bubbling.
4. Add butter, salt, and 1 cup flour.
5. Mix- by hand or with the bread hook attachment on a stand mixer- until the flour is incorporated.
6. Add another cup of flour, mix for 30 seconds on medium speed if using a mixer.
7. Add the remaining 1 1/3 cup flour and mix. The dough will be on the wet side.
8. Either knead by hand or in stand mixer for 3 minutes at medium speed, adding another 2 tablespoons or so of bread flour as needed.
9. The dough will still be kind of wet and sticky.
10. Placed in a greased bowl, turning once to coat the dough. Cover loosely and let rise somewhere warm for 1-1.5 hours, or until the dough has doubled in size.
11. Punch down on the dough to release air, turn out onto floured surface.
12. Shape into an 8" by 15" or so rectangle. You don't have to be super precise.
13. Grease a loaf pan.
14. Roll along the SHORT side, placing the rolled loaf into your loaf pan.
15. Cover and let rise again until the dough is about 1" (2.5cm) above the edge of the loaf pan. Roughly 45 minutes to 1 hour.
16. Preheat oven to 350F (177c).
17. Bake for about 35 minutes, until the top is golden brown.
