A lighter version of the classic Beef Stroganoff, this recipe swaps sour cream for Greek yogurt, reducing the fat content without sacrificing flavor. It's a creamy, comforting dish perfect for a cozy dinner.
Ingredients: 400g lean beef strips. 1 onion, thinly sliced. 2 cloves garlic, minced. 200g mushrooms, sliced. 1 tablespoon olive oil. 1 cup beef broth. 1 cup plain Greek yogurt. 2 tablespoons flour. 2 tablespoons Dijon mustard. Salt and pepper to taste. Chopped parsley for garnish.
Instructions: In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until softened. Add beef strips, cook until browned. Add mushrooms, cook until tender. Sprinkle flour over the mixture, stir to combine. Pour in beef broth, stirring constantly until it thickens. Reduce heat, stir in Greek yogurt and Dijon mustard. Season with salt and pepper to taste. Simmer for 5-10 minutes until heated through. Serve over cooked noodles or rice. Garnish with chopped parsley before serving.
