Protein packed dinner... I'm having a low carb and low fat EARLY dinner because today is taco Tuesday!!!!! Every Tuesday Matt and I, along with some friends, head to a local restaurant for taco Tuesday. Instead of greasy wings and fries on wing night we made the choice to switch to taco Tuesday. This way we still get an evening out with friends and drinks but it's a healthier food choice. I typically have an early dinner so that I don't load up on unhealthy food and booze at 7:30. I usually order 3 tacos (they are very small- $2/taco) and 1-2 drinks. That keeps me in my macros and calorie count for the day. This meal is to die for and Healthy! . Zucchini patties 1.5 cups shredded zucchini 3 tbsp egg whites (1 egg white) 1 tbsp whole wheat panko -- just spray skillet with coconut non stick for 1 second and fry patties- it makes 2-- . Shrimp 12-15 small to medium shrimp -- coconut non stick and fry for 2 minutes until pink-- . 4oz mahi mahi Pinch salt and pepper and your choice of sodium free seasoning. I use Mrs dash or epicure. --Spray cast iron or oven safe skillet and place fish skin side up and sear for a minute. Flip and place in 350 degree oven for 3 minutes. . Layer zucchini patty with 1 tbsp 0% plain Greek yogurt. Top with mahi fillet and then shrimp.
