Copenhagen 2021 1/2 . . . Two posts for two disrupting experiences of my new life (the n-one) condensed in 11 days. Gratitude is the first feeling for @themadfeed MAD Academy and it's crew @magnusfaviken @melshannondipietro Jack Roberta and Ana who took this crowded group of hungry people from the catering industry from the whole world by hand along a beautiful and intense journey. Enlightening. Empowering. Sharing. Feeding. Guiding. Opening new doors and new angles to interpret our own jobs and everyday lives. Gratitude and availability is the feeling I take home with me and deliver to all the friends of this crazy adventure. And last but not least thanks to @MART.CAPONETTI for awakening me. Change is possible. And you can be part and author of it. Again, thank you. It is only the first step. Never stop learning. You've been there whenever i need you for over 2 years. We can tell each other anything, we’ve always helped each other our problems. You like the same shit i do, and we have the same humour. Thank you for every thing.  You've been right in front of me this whole time. It took this long to realise how perfect you are for me. We’ve helped each other go to hell and back with our own lives. Now its time to do it together.  Ever since our eyes met that time, and we realised shit just went from 0-100 real quick I've been the happiest guy on earth. It’s amazing how quick things can change.

Being a chef doesn't make you an agent of social change, by Jay Rayner.

Rayner's essay clearly shows he has a great bit of respect for the culinary profession, and just as clearly that he believes the current crop of super star chefs are stretching beyond their talents by pushing for social and environmental sustainability through multi-course tasting menus for 'wretched, sneering, status-obsessed, gold-card-carrying narcissists, with scant interest in the food on the table before them.' His words not mine. 

The reality is that in the battle to feed the coming nine billion, a good recipe for coq au vin is of no use at all.... The nutritional challenges of the 21st Century are huge. They are about supply and waste.... They are the very essence of geopolitics.
