Ingredients: 2 cups dried pinto beans. 1 smoked ham hock. 1 medium onion, diced. 2 cloves garlic, minced. 1 green bell pepper, chopped. 1 can 14 oz diced tomatoes, undrained. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. 4 cups chicken broth. 2 tablespoons vegetable oil. Chopped fresh parsley for garnish.
Instructions: Sort and rinse pinto beans. Either overnight or quickly soak them will work. Vegetable oil should be heated over medium heat in a big pot. Add the bell pepper, garlic, and onions, and saut until the veggies are soft. Add the black pepper, cayenne, diced tomatoes, smoked paprika, soaked beans, and smoked ham hock. Mix thoroughly. After adding the chicken broth and bringing it to a boil, turn down the heat. Cover and simmer for two to three hours, or until the beans are soft. Shred the meat and add it back to the pot after removing the ham hock. Throw away the bone. Taste and adjust seasoning, then simmer for a further 15 to 20 minutes. Garnish with freshly chopped parsley and serve hot. Savor the charm of beans prepared in the South!
