自家製ごぼう茶

洗って水気を切ったら薄く細かくきざみます。それをフライパンに置き加熱していきます。

うちでは使い古したフライパンを油抜きして、製茶専用に使用しています。ゴボウは部分的に焦げないように菜箸などでかき回し、火加減を調整しながら水分を飛ばしていきます。カリカリになってきたらそこからは焙煎の行程。熱で渋味成分のタンニンが甘みに代わり、表面の焼けが香ばしさになります。ただしやり過ぎると炭になるので、香り立ちして写真のようにキツネ色になったら火を止めます。これで完成ではありますが、しばらくそのまま置いて余熱を取り、容器に入れて冷蔵庫に入れると湿気を吸わず、美味しさが保たれるでしょう。

濃さは好みで変えればいいですが、目安は熱湯1リットルに大さじ1杯の分量。煮立てなくても置いておけばじんわり、じんわりと茶色のエキスが溶出し、ほんのりとした旨味と甘み、そして香ばしいコクが味わい深いごぼう茶が出来上がります（やったね！）。冷めても美味しいよ！
