My green chili recipe 1lb lamb 2 Tbsp olive oil Salt and pepper to taste Three Tbts flour or corn starch 1 jalapeño roasted 1 Anaheim or adobo chili roasted 1 medium onion 4 cloves garlic 4 tomatillos 1 can diced tomatoes with juice 5 cups chicken or beef stock 1/2 tsp oregano 1/4 tsp cumin Put oil in large pot on high/medium high. Put flour or corn starch in. Add meat. Salt and pepper to taste. Brown meat. Remove and set aside. Brown onions and garlic. Add meat back in along with chilies, tomatillos and tomatoes with juice. Add in stock, oregano and cumin. Bring to a boil, reduce heat and simmer for 30 minutes. If it’s not thick enough, remove some of the soup and veggies, purée and return to pot. This is mild, by my standards, but with enough kick that my family puts cheese on it. It’s great with cornbread. When I was asked by my sister what favorite song was of 2018 the choice was hard because of just how many brilliant songs are out there. I had to think about it and narrowed it to 3 songs. This song by Mike Shinoda called Make it up as I go (featuring K.Flay) is #3 on the list and is the way its felt this year. Through adversity, pain, regret and hope I've managed to continue to smile and keep my positive attitude. Inside I'm tearing down walls and constantly rebuilding my heart mind and body. Getting wiser wirh age, stronger with heart and more sturdy with body. I dont which way I'll go and what can happen, thought I had it all mapped out but life changed that so I'll make it up as I go.
