Mango Cheesecake Recipe Oval ring/Pan is similar to 7” by 2” circle pan Serves 8-10 pieces
1.4 oz/40g 5% Yogurt Cheese
Combine and mix flour and oil
Combine the sugar and milk, and add them to the yogurt
Add the mixture to the flour and mix until all are well combined
Cover and place it in the fridge for 15 minutes
Transfer the crust mixture into the ring/pan to form a ¼ inch thick layer
Press with a spatula and dock it
-Sprinkle the crust with brown sugar
Bake at 355 °F/180 °C for 15-20 minutes
Use a knife around the edges to loosen the crust
Let it cool down while preparing the filling
Filling and decoration
3 Mangos
Peel the mangos Slice one mango and cut out 6 circles and slice them in half and set them aside After placing the cake in the fridge, peel the other two mangos into thin slices and roll them up
1.3 lb/600g 5% Yogurt Cheese
0.4 oz/10g Powdered Sugar
Mix the cream and the sugar at medium speed until soft peaks
Mix gelatin with 1 tsp of water and set aside
Mix cheese, sugar and vanilla until all are well combined
Add the boiled water to the gelatin and mix until it dissolves
Add it to the mixture and mix
Add the whipped cream in two batches and gently fold
Wrap the inside of the ring with a clear cake band
Place the crust into the ring/pan and wrap the slices around the edges
Scoop the filling into the ring and smooth the top
Place it in the fridge for at least 4 hours
Use the remaining of the cheese mixture to pipe the cake
