Ingredients: 1 ripe mango, peeled and diced. 1 cup chopped melon such as honeydew or cantaloupe. 1 cup dairy-free yogurt. 1/2 cup coconut milk. 1-2 tbsp maple syrup or agave nectar, to taste. 1/2 tsp ground cardamom. A few ice cubes optional. Fresh mint leaves, for garnish optional.
Instructions: In a blender, combine diced mango, chopped melon, dairy-free yogurt, coconut milk, maple syrup or agave nectar, and ground cardamom. Blend until smooth and creamy. If desired, add ice cubes and blend again for a frostier texture. Taste and adjust sweetness if necessary by adding more maple syrup or agave nectar.
