Doing work on that roux! The sauce on the dish last night had chunky bits of red bell pepper, sweet onion and garlic in it. I brought it up to a low temp and added some fresh chicken stock to thin it out a bit. I poured the mixture into a blender to purée it into a gravy. It’s perfect! @brew_n_bbq had a fantastic idea for my leftover roux last night. POUTINE! Not just any poutine tonight, I’m adding some @mapleleaffarms duck breast to the mix. I thick sliced the potatoes into fries and they are soaking in some salt water in a @cambromfg container until I need them. I’m dying to bust open these @ellsworthcreamery white cheddar cheese curds.
