Duck poutine tonight! I made this with a @mapleleaffarms duck breast seasoned with @naturiffic Q-Salt sautéed in cast iron on the @kamadojoe. The thick fries were cold fried in peanut oil in the @lodgecastiron Cook-It-All over @fogocharcoal until golden brown and crispy then drizzled with the duck breast fat. The gravy was made from the leftover roux from my dish last night. It was a bit thick and chunky style so I added some chicken stock and thinned it down then puréed it in a blender. The spicy hints from the @slapyamama seasoning tasted great! The @ellsworthcreamery white cheddar cheese curds were brought to room temp and added at the end with the sauce and duck. Doing work on that roux! The sauce on the dish last night had chunky bits of red bell pepper, sweet onion and garlic in it. I brought it up to a low temp and added some fresh chicken stock to thin it out a bit. I poured the mixture into a blender to purée it into a gravy. It’s perfect! @brew_n_bbq had a fantastic idea for my leftover roux last night. POUTINE! Not just any poutine tonight, I’m adding some @mapleleaffarms duck breast to the mix. I thick sliced the potatoes into fries and they are soaking in some salt water in a @cambromfg container until I need them. I’m dying to bust open these @ellsworthcreamery white cheddar cheese curds.
