Ingredients: 1 1/2 cups all-purpose flour. 2 teaspoons baking powder. 1/4 teaspoon salt. 1 1/4 cups almond milk. 1/4 cup maple syrup. 2 tablespoons coconut oil, melted. 1 teaspoon vanilla extract.
Instructions: In a mixing bowl, combine flour, baking powder, and salt. In another bowl, whisk together almond milk, maple syrup, melted coconut oil, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay. Preheat your waffle iron according to the manufacturer's instructions and lightly grease if necessary. Pour the batter onto the hot waffle iron, close the lid, and cook until golden brown and crispy. Repeat with remaining batter. Serve warm with your favorite toppings such as fresh fruit, vegan whipped cream, or additional maple syrup.
