Ingredients: 1 cup unsalted butter. 1 cup granulated sugar. 1/2 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 3/4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon cream of tartar. 1/2 teaspoon salt. 1/2 cup chopped caramel candies. 1/4 cup granulated sugar for rolling. 1 teaspoon ground cinnamon. Sea salt, for sprinkling.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a skillet, melt the butter over medium heat. Continue to cook, swirling occasionally, until the butter turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly. In a large bowl, combine the browned butter, granulated sugar, and brown sugar. Mix until well combined. Add the eggs and vanilla extract to the butter-sugar mixture. Mix until smooth. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped caramel candies. In a small bowl, mix together the 1/4 cup granulated sugar and ground cinnamon for rolling. Shape cookie dough into balls, about 1-2 tablespoons each. Roll each dough ball in the cinnamon-sugar mixture until coated. Place the coated dough balls on the prepared baking sheets, spacing them apart. Gently flatten each dough ball with the bottom of a glass or your palm. Sprinkle a small pinch of sea salt on top of each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still slightly soft. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
