Miso Butter Mazemen / Japanese No-Broth Ramen Noodles (Vegan)

Want to make mazeman at home? You definitely can, and it’s easy! The most important part of this dish is accessibility to a great Asian grocery store or a great online Asian grocery store. The second most important thing is the noodles. Depending on the size of the grocery store, you might be overwhelmed with the varieties of noodles. Even the ramen! I don’t have brand recommendations. If it’s labeled as ramen noodles, you can probably use it. You might even see it labeled as Japanese curly noodles too.

Tip: Don’t use the stuff from the instant noodle package even though you might be tempted just because it’s what you know. Instant noodles are fried, and it ruins the texture of mazeman. You want something which my family calls “QQ,” which is the Taiwanese equivalent of al dente. It’s something that instant noodles just can’t do. (Yeah, I’m a snob about my noodles.)

For 2 servings:

Sauce:

1 c. chicken or pork broth

2 tbsp. cornstarch

1 tbsp. vegetable oil

1 garlic clove, minced

1 tsp. freshly grated ginger

2 tbsp. shoyu

1 1/2 tbsp. mirin

Noodles:

5 1/2 oz. dried ramen noodles*

2 oz. sliced shiitake mushrooms

2 tbsp. chopped chives

2 tbsp. kizami [shredded] nori

2 soft boiled egg

Furikake

In a small bowl, mix together broth and cornstarch.

In a medium saucepan, heat vegetable oil over medium heat. Add garlic and ginger. Cook until fragrant. Add broth and cornstarch mixture, whisking continuously.  Cook over medium low heat for 5 minutes. Whisk in shoyu and mirin; remove from heat.

Meanwhile, cook dried noodles according to package directions. If there are no directions, cook in boiling unsalted water until it’s QQ, about 3 minutes. Once noodles are cooked, shock with cold water. Gently stir in sauce.

Divide noodles, sliced mushrooms, chives, and nori.

Garnish with soft boiled egg and desired amount of furikake.
