Lentils. And cheese. I have IBS and I just don’t digest black/ red beans well. But lentils work well for me and they are super versatile, boil them for a while with some veggies and some spices. I also like goat cheese, specially feta. Quinoa is super good, but is not that cheap, but it grows a lot when you cook it and it fills you up for a long time because of the high amount of proteins.
Unfortunately, I have the same texture problems with lentils. If they’re not cooked down to mush, I don’t really care for them. Maybe I just suck at cooking beans and lentils? I do love cheese, so that’s an easy source, but I know I need to up my fiber intake, hence the thinking about beans and whatnot.

Ooooh, mushrooms. I do love mushrooms and I know mixing mushrooms with ground beef is already a thing.

I cook massive pots of pasta sauce and throw tons of veggies and eggs in it
I feel silly asking, but do you just crack the eggs in and let them poach in the sauce or do you scramble them in?
