It's been a busy Monday, so meal prep just didn't happen today. I opted for an extremely simple, meatless Monday meal for the family...baked potatoes and salad. While I like to do meal prep, some weeks it just doesn't happen and that's ok. Life will never be perfect so if we try to wait until it is before we do this or that, we'll never get anything done (talking to myself here 🙋).
