Enjoy a healthier version of Subway's classic meatball sub by using lean ground turkey, whole wheat breadcrumbs, and fresh vegetables.
Ingredients: 1 lb lean ground turkey. 1/2 cup whole wheat breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 egg. 1/4 cup chopped fresh parsley. Salt and pepper to taste. Whole wheat submarine rolls. Low-sodium marinara sauce. Fresh spinach leaves. Sliced tomatoes. Sliced red onions. Optional: Low-fat mozzarella cheese.
Instructions: Preheat oven to 375F 190C. In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, garlic, egg, parsley, salt, and pepper. Mix well. Form the mixture into meatballs of desired size. Place meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked through. Slice the submarine rolls lengthwise, but not all the way through. Warm the rolls in the oven for a few minutes. Spread marinara sauce on one side of the rolls. Place spinach leaves on top of the marinara sauce. Add sliced tomatoes and red onions. Place cooked meatballs on top of the vegetables. Optional: Add a sprinkle of low-fat mozzarella cheese on top of the meatballs. Close the sandwiches and serve warm.
