Classic Lasagna ~ Quick Meatless Style
Ever since I stopped eating red meat years ago, beef in particular, I have since missed & reminisced the sensation of eating the same home baked style of lasagna that brings back all those great childhood memories.
In the course of time of not eating meat, upon returning to it on occasion in my recent years past, it hasn't tasted the same as I remember. I have since made it a personal quest to recreate the same great flavor and texture without the actual meat.
I haven't posted anything in ages and it's high time I got inspired again. I experimented & succeeded! Happy and satisfied tummy with the thought a comfy soulful meal just like that of my youthful days I played in the dirt on the streets as a kid.
Here's the super easy recipe for great food flashbacks for those that miss their beef but not the meat...
Ingredients: (makes 2 square deep dish lasagnas about 8 x 8 x 2 inches)
1 cup of walnuts, grounded
1 can of chickpeas/garbanzos, blended 400g
1 whole handful of swiss brown mushrooms, diced
1 small onion, diced
half a bulb of garlic, diced
amino acid or mild soy sauce
1 can of crushed tomatoes 800g
Ready made alfredo sauce 425 grams
Ricotta cheese/cottage cheese 240g
Lasagna pasta 500 g *I used Colavita (di Semola 166) brand as it is a no boil kind...I'm lazy...it works quite well, I must say.
Optional: fresh basil, cut into long small strips
Meat mixture:
Use half of the diced onion and garlic, & saute them in a pan with a bit of oil. Once the onion turns clear, start to add the diced swiss brown mushrooms, grounded walnuts & chickpeas. Add salt, pepper a little bit of amino acid for color and taste. I also added a bit of ground smoked paprika and spanish paprika for that smoky and sweet flavor. It should look like real meat and taste like it too. When you taste this, it would seem like you would want to add a pinch of sugar but do not, as that is exactly what you will get once you add the crushed tomatoes.
So then now, add the crushed tomatoes for that sweet balance and 2 tbsps of tomato paste for a bit of the tangy. Your chunky red sauce is ready. Set aside.
Lazy White Sauce:
Take any favorite ready-made Alfredo sauce, spread it as evenly as possible then top with either ricotta or if you are on a budget, use cottage cheese. That's all it is... SIMPLE as!
**It's time for the fun part...**
Layering the lasagna:
Since I use the non-boil kind of lasagna strips, this dish is the easiest to make. Genius and easy!
First, brush the bottom of the dish with a teensy bit of olive oil to ensure that the pasta does not stick to the bottom of the pyrex. Place the pasta strips then the meat mixture...
then the pasta again...
then the white sauce...
Do this in alteration until you end up with the white sauce on the top, then dress it with parmesan, some dried basil and bake at 180C for about 25-30 mins or until brown.
It doesn't take long at all as it is not actual meat. It's just basically waiting for it to be cohesive and of course, waiting for the edges to turn brown as I love the top bit on the crispy toasty side. :)
Top with fresh Basil leaves & your ready to gobble away like Garfield does...Now, I know why this is his favorite food. :)
**This dish is good for Lacto-Vegetarians.
