Okay. I loooooooooove Ratatouille! It's the easiest, most flavorfully savory dish you can possibly make.
2 T olive oil 2 cloves garlic, crushed and minced 1 large onion, quartered and thinly sliced 2 small eggplants, cubed (I used chinese eggplant this time around) 2 bell peppers, coarsely chopped (I like to use 1 green, 1 red) 4 large tomatoes, coarsely chopped 3 to 4 small zucchini, cut into 1/4-inch slices
Herbs Galore! 1 t dried leaf basil 1/2 t dried leaf oregano 1/4 t dried leaf thyme (or fresh if you have it) 1/2 t rosemary 2T chopped fresh parsley
Heat olive oil over medium heat. Add garlic and onions and cook, stirring often, until softened, 5 or 6 minutes. Add eggplant; stir until coated with oil. Add peppers; stir. Cover and cook for 10 minutes, stirring occasionally to keep veggies from sticking. Add tomatoes, zucchini, and herbs; mix well. Cover and simmer on low (15mins/until eggplant is tender but not too soft).
