Ingredients: 4 lbs beef short ribs. 1 bottle 750ml Merlot wine. 2 cups beef broth. 1 onion, diced. 4 cloves garlic, minced. 2 carrots, chopped. 2 stalks celery, chopped. 2 tbsp olive oil. Salt and pepper to taste. 4 large potatoes, peeled and diced. 1 head garlic. 1/2 cup heavy cream. 4 tbsp butter. Chopped fresh parsley for garnish.
Instructions: Warm the oven up to 175F 350C. Add a lot of salt and pepper to the short ribs. In a big Dutch oven, heat the olive oil over medium-high heat. For about 5 minutes on each side, sear the short ribs until they are browned all over. Take it out and set it aside. Put minced garlic, diced onion, chopped carrots, and celery in the same Dutch oven. It will take about 5 minutes of cooking until the vegetables are soft. Use Merlot wine to clear out the pot and scrape up any browned bits on the bottom. Put the short ribs back in the pot and add the beef broth. Bring to a simmer, then cover and put in an oven that is already hot. Put the meat in the oven and braise it for two and a half to three hours, or until it is soft and falls off the bone. Make the roasted garlic mashed potatoes at the same time: Remove the garlic's top, drizzle it with olive oil, cover it in foil, and roast it in the oven for 30 to 40 minutes, until it is soft and caramelized. Get the garlic cloves out of the skin and set them aside. In salted water, boil diced potatoes for about 15 to 20 minutes, or until they are soft. Take it out of the pot and put it back in. Burned garlic, heavy cream, butter, salt, and pepper should be mixed into mashed potatoes until they are smooth and creamy. Take the short ribs out of the oven when they're done and skim off any extra fat that forms on top of the braising liquid. Put the short ribs on top of the roasted garlic mashed potatoes and sprinkle chopped parsley on top.
