Out of the left bank St Estephe up the north of the famous AOC medoc communes is the slowest to ready for drinking, a bit closer to the Atlantic Ocean it takes it time with they cool breezes. The tannins take a bit of time to melow so 7-10 years is really a minium. There was a little sedement in the bottom of the bottle once I had decanted, showing a good developing. I left it a good 5 hours to open up. I got this on offer in Majestics for under a tenner about 4 years ago and it is now drink well and drinking like a wine double its price. It was on its way to garnet I should have maybe left it another year or two. A lot of tertiory aromas starting to come through but a good balance of black fruit on the nose. It went amazing with these lamb chops done very simple just cooked in there own fat with Salt, Pepper, Dried Oragano and Rosemary. Bordeaux and lamb what could be better?
