Ingredients: 2 lbs beef chuck roast, thinly sliced. 1 onion, thinly sliced. 1/2 cup soy sauce. 1/4 cup brown sugar. 3 cloves garlic, minced. 2 tablespoons sesame oil. 1 tablespoon ginger, grated. 1 tablespoon rice vinegar. 1 tablespoon sriracha sauce. 1/4 teaspoon black pepper. 1/4 cup water. 12 small tortillas. 1 cup shredded lettuce. 1 cup pickled vegetables carrots, radishes, cucumber. 1/2 cup poached eggs. Sesame seeds and green onions for garnish.
Instructions: To make the marinade, put water, soy sauce, brown sugar, garlic, sesame oil, ginger, rice vinegar, Sriracha sauce, and black pepper in a bowl. In a crock pot, put sliced beef and onions. Then, pour the sauce over the beef and onions. Toss to cover everything. Put the lid on top and set the heat to low. Cook for 6 to 8 hours, or until the beef is soft and can be shred with a fork. Cut the carrots, radishes, and cucumber into thin strips to make the pickled vegetables while the beef is cooking.
