Ingredients: 1 can black beans, drained and rinsed. 2 poblano peppers, roasted, peeled, and chopped. 1 cup smoked mozzarella cheese, shredded. 8 whole wheat tortillas. 1 tablespoon olive oil. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. Fresh cilantro, chopped for garnish.
Instructions: In a bowl, mash the black beans with a fork or potato masher. In a skillet over medium heat, warm the olive oil. Add the mashed black beans, chopped roasted poblano peppers, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally. Place a tortilla in the skillet, spread a portion of the bean mixture over half of it, and sprinkle with smoked mozzarella. Fold the tortilla in half, pressing gently with a spatula. Cook until the bottom is golden brown, then flip and cook the other side until golden and the cheese is melted. Repeat with the remaining tortillas and filling. Once done, cut each quesadilla into wedges, garnish with chopped cilantro, and serve hot.
