Ingredients: 1 cup unsalted butter, melted. 1 package phyllo dough 16 oz, thawed. 2 cups chopped mixed nuts walnuts, pistachios, almonds. 1 teaspoon ground cinnamon. 1 cup granulated sugar. 1 cup water. 1/2 cup honey. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and grease a baking dish. In a bowl, mix the chopped nuts with ground cinnamon and set aside. Unroll the phyllo dough and cut it to fit the size of your baking dish. Place one sheet of phyllo dough into the dish and brush it with melted butter. Repeat the previous step, layering phyllo sheets and butter, until you have about 8-10 layers. Sprinkle a generous amount of the nut mixture over the phyllo layers. Continue layering phyllo sheets and butter, then add another layer of nuts. Repeat until all nuts are used. Finish with 8-10 layers of phyllo dough on top, making sure to brush each layer with butter. Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes or until golden brown and crisp. While the baklava is baking, prepare the honey syrup by combining sugar, water, and honey in a saucepan. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves. Simmer the syrup for 5 minutes, then remove it from the heat and add vanilla extract. Once the baklava is done baking, immediately pour the hot honey syrup over it, making sure to cover all pieces. Allow the baklava to cool completely and absorb the syrup before serving.
