A few years ago, I made these Coconut Macarons for a @bocusedorcanada fundraiser with @chefvincentparkinson 😊. I loved those fundraisers - it was an opportunity to be creative. That is how the idea for these macarons came to be. The unique thing about this version of the famous French delicacy is these are #nutfree and naturally #glutenfree 😉There is no color added. I wish I had the same ovens that I used at work - the macarons were quite white the first time I made them in a fan assisted oven however, I think they still look pretty special - and they are delicious! The filling is white chocolate ganache. This one is for you, @kiraparkinson ! Macaron are the diva of all French cookies and the bane of many pastry chefs. They are technical and pernickety but so worth the effort (and practice). Briefly, the recipe is as follows : Ingredients: • 205 g icing sugar • 190 g desiccated coconut Pulse until fine and pass through a sieve (discard any big bits remaining in the sieve). Add 72 g of egg whites and mix into a paste. Add food colouring paste at this point if you choose to use it. Cover this mixture and set aside. Make an Italian meringue (more stable for macarons): • 190 g caster sugar • 60 ml water When the sugar syrup reaches 230F on instant read thermometer, start whipping 72 g (a second amount) of egg whites in a mixer until they are frothy. Continue cooking the syrup until it reaches 244F. Pour the syrup slowly along the sides of the mixer bowl. Keep whipping the meringue until the mixture is room temperature (about 5-6 minutes). Add one large spoonful of meringue to the coconut mixture and stir vigorously to combine. All the rest of the meringue all at once, gently folding and cutting in until the mixture falls from your spatula in ribbons. Pipe, tap trays, leave to form a skin on top and bake as normal (325F for approx 12 min).
