Say i played the Very Cryptic Command that has "copy target instant/sorcery..." choosing any 2 options. I then play another VCC of the same type choosing to copy the first, can i make new choices for the copy of the spell or does it copy the choices i originally made?
You can never change the mode or modes of a modal spell (a spell that says choose one, choose two, etc.) when you copy it. At least there isn’t yet a spell that allows you to do so, and for good reason: Allowing you to change the modes of a spell would allow for modes without legal targets to be chosen and that would be awkward since the copy is already on the stack.
I couldn't find anything in the rules about this, so I figured I should ask here. When a modal spell for which multiple modes are chosen resolves, do the effects of the chosen modes occur in printed order or the order the modes were chosen? Does the same apply when the same mode can be picked multiple times?
The chosen modes resolve in the order they’re printed. If one mode is chosen multiple times, then all instances of that mode happen one at a time before moving on to the next mode.
If I use Redirect on a modal spell, say Kolahgan's Command, when I am choosing new targets can I also re-pick the modes used?
No.
You can never re-select modes for a copied or re-targeted modal spell.
If I control an embodiment of fury/insight and cast atarka's command with the 3rd and 4th modes, do I get an elemental from the landfall trigger before the 4th mode resolves?
No.
You have to resolve Atarka’s Command fully before you can deal with any triggers that its resolution generates.

When you copy a modal spell like Invoke the Firemind or a charm, you can’t change the mode.
To tag onto the latest question, when do I choose modes for a spell, and when do I choose targets? Take for example: Dromoka's command? Upon resolution of the spell or when I cast it?
When you cast it, before you choose targets.
If narset gives a charm rebound, do I have to use the same mode when it rebounds?
No. You’re casting it fresh, so you get to make all choices for it again.
